Meatloaf

2 lbs ground beef
1 sleeve Saltine Crackers
1 bell pepper
1/2 onion
1 Egg
A ton of ketchup
2 T Worchestershire Sauce
salt and pepper

Saute diced bell pepper and onion until soft. Mix all in bowl. When in doubt, add more ketchup. Cook at 350 for 45-60 minutes or until it looks edible. Good luck. 


Mississippi Pot Roast

3 lbs chuck roast, cut lengthwise and seared on both sides - do not salt and pepper
1 c beef broth
1 regular jar mild banana peppers with juice
1 oz packet ranch mix (or 2 T)
1 oz packet au jus mix
3/4 stick butter

Sear meat on saute in Instant Pot - 4 minutes each side. Remove and cover. Pour in beef broth and deglaze with whisk. Add entire jar of peppers, both mix packets, and butter. Add meat back in. Cook on manual pressure for 60 minutes. Allow to natural release for 15 minutes.


Stuffed Peppers

Olive Oil
1/2 lb ground beef
1 c onion, chopped
1 T taco seasoning
2 c cooked rice
4 bell peppers
1 can black beans, drained & rinsed
1/2 c frozen corn
16 oz jar salsa
cheddar cheese, shredded

Coat halved peppers in olive oil. Cook at 400 for 20-25 minutes. Saute ground beef and onions in skillet with taco seasoning.  Add rice, beans, corn, and salsa. Stuff peppers with mixture and top with cheddar. Cook for 15-20 minutes at 400. Serve with sour cream, cilantro, and avocado. (all optional)


Beef Chow Mein

2 pkgs ramen noodles, boiled 3 minutes
1/2 lb suki yaki or other thinly sliced beef, sliced in strips
1 red bell pepper, julianned
4 green onion, chopped
1/2 t minced garlic
3-4 T oyster sauce
2 T soy sauce
1/4 c water

Mix liquids. Saute meat and red pepper in garlic and some olive oil.  Add boiled noodles and pour liquid mixture over.  Stir in green onion.


Korean Beef

1 lb ground beef
1/4 c brown sugar
1/4 c soy sauce (low sodium preferably)
1 T sesame oil
3 cloves garlic, minced
1/2 t ginger
salt & pepper
green onion, chopped
White or brown rice, cooked

Brown beef over medium heat with garlic and sesame oil.  Add all else except green onion and simmer.  Serve over rice & top with green onion.


Ground Beef Stroganoff

1 T olive oil
1 lb ground beef
1/2 medium onion, diced
1 lb mushrooms
2 garlic cloves, minced
2 T flour
1 c beef broth
1 c whipping cream
1 T worcestershire sauce
1/2 t salt (to taste)
1/2 t pepper (to taste)

Cook ground beef, onion, and garlic in heated olive oil until onion is translucent. Add sliced mushrooms and saute for another 5 minutes. Add flour and stir until fully incorporated. Add beef broth, whipping cream, worcestershire sauce, salt, and pepper and bring to a simmer. Turn heat to low and simmer for about 5 minutes. Remove form heat and add sour cream. Stir to combine, add additional salt or pepper to taste. Serve over noodles, rice, or potatoes.
