Matt's Favorite Chocolate Chip Cookie

1/2 c butter
1/2 c shortening
2 eggs
1 c brown sugar
1/2 c white sugar
1.5 t vanilla
2.5 c flour
1 t baking soda
1/2 t salt
1/2 bag chocolate chips

Cream fats & sugars. Add eggs & vanilla. Combine dry ingredients & mix well.  Mix dry into wet and stir in chocolate chips. Bake at 375 for 8 minutes.


Morgan's Favorite Chocolate Chip Cookie

3/4 c unsalted butter, softened
3/4 c brown sugar
1/4 c white sugar
1 egg
1 t vanilla
2 c all purpose flour
2 t cornstarch
1 t baking soda
1/2 t salt
1 c semi-sweet chocolate chips

Cream butter and sugars. Mix in egg and vanilla. Mix in dry ingredients. Stir in chips. Bake at 350 for 8-10 minutes.


Chocolate Chocolate Chip Cookies

3/4 c butter
1.5 c white sugar
2 egg
2 t vanilla
2 c all purpose flour
2/3 c cocoa powder
1 t baking soda
1/2 t salt
1 c semi-sweet chocolate chips

Cream butter and sugars. Mix in egg and vanilla. Mix in dry ingredients. Stir in chips. Bake at 350 for 9-12 minutes. Makes 26


Snickerdoodles

1/2 c butter
1/2 c shortening
1 1/2 c sugar
2 eggs
2 3/4 flour
2 t cream of tarter
1 t baking soda
1/4 t salt

Cream fats and sugar well. Mix dry ingredients separately and then add to creamed mixture. In small bowl mix 2 T sugar and 2 t cinnamon. Shape dough into 1 1/2 inch balls and roll in cinnamon-sugar mixture. Place 2 inches apart on ungreased cookie sheet. Bake at 400 for 8-10 minutes. These freeze very well.



Gingerbread Cookies

3/4 c butter, softened
1 c brown sugar

Cream together

Add: 1 egg
3/4 c molasses

Combine separately:
4 c flour
2 t ginger
1 1/2 t baking soda
1 1/2 t cinnamon
3/4 t cloves
1/4 t salt

Mix dry and wet mixtures together. Cover and refrigerate for 4 hours. Roll out to 1/8", cut out, place 1 inch apart on ungreased baking sheet. Bake at 350 for 8 minutes - that's right - 8 minutes ONLY.



Molasses Cookies

4 c all purpose flour
2 t baking soda
1 t salt
2 t cinnamon
1 t cloves
1 t ginger
1 1/2 c butter, softened
1 1/2 c white sugar
2 large eggs
1/2 c molasses
sugar for rolling

Whisk together flour, baking soda, salt, and spices. Set aside. Beat together butter and sugar until creamy. Add molasses and eggs and mix until well combined. Stir in dry ingredients. Refrigerate for a thicker/chewier cookie. Roll into 1 inch balls, then roll balls in white sugar. Place on parchment-lined cookie sheets. Bake at 375 for 8-10 minutes


Oatmeal Chocolate Chip Cookies

1 c butter
1.5 c brown sugar
2 eggs
2 t vanilla
2 c flour
1/2 t salt
1 t baking soda
1/2 t baking powder
1 3/4 c oats
chocolate chips

Cream butter & sugar. Mix in eggs & vanilla. Add flour, salt, soda, & powder - don't over mix. Stir in oats and chocolate chips. Freeze dough for 20-30 minutes. Bake at 350 for 10 minutes.


Peanut Butter Oatmeal Cookies

1/2 c butter
1/2 c peanut butter
1/3 c sugar
1/3 c brown sugar
1 egg
1/2 t vanilla
1/2 c flour
1/2 t baking soda
1/8 t salt
1.5 c oats

Cream butters and sugars. Add egg and vanilla - mix for 1 minute. Add flour, soda, and salt. Stir in oats. Chill in freezer between batches. Bakes at 350 for 13-15 minutes.


No Bake Cookies

2 c sugar
4 T cocoa
1/2 c butter
1/2 c milk or water
3/4 c peanut butter
1 T vanilla
3 c oats

Bring first four ingredients to a boil; boil for 30 seconds. Stir in peanut butter, vanilla, and oats.



Sugar Cookies for Royal Icing

1 c butter, room temp
1 c sugar
1.5 t vanilla extract (or up to 2T of emulsions)
1 egg
2 t baking powder (or none to prevent spread)
1/2 t salt
3 c all-purpose flour (360 grams)

Preheat oven to 350. Cream butter and sugar at least 3 minutes. Beat in egg. Add dry ingredients. Mix.

Roll out and cut as desired - cookies meant to be at least 1/4 inch thick. Bake 6-8 minutes. Cookies should not be brown at all when done.
